Lentil Sloppy Joes

I have been looking at more “kid friendly” recipes and saw many renditions of a lentil sloppy Joe so I decided to try my hand at it. I have never had an actual sloppy Joe so I can’t speak to the comparison but this was really tasty and the kids loved it. I count that as a success.


  • 2 cups vegetable broth
  • 1 cup green lentils
  • 1/2 a yellow onion
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/2 green bell pepper
  • 1 can (15oz) tomato sauce
  • 1-2 tbsp coconut sugar
  • 2 tbsp Worcestershire sauce
  • 2 tsp soy sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp paprika
  • hamburger buns

Add the lentils and vegetable broth to a pot and bring to a boil. Reduce heat to a simmer and cook for 15-20 minutes. (They are done when they are tender.) Drain and set aside.


Heat the oil and once hot add the garlic, onion, and green bell peppers. Season with salt and pepper and cook for 5 minutes.


Add the coconut sugar, soy sauce, Worcestershire sauce, chili powder, cumin, and paprika. Stir to combine.


Add in the lentils and cook until heated through and thickened.


Serve on toasted buns.


Don’t be fooled by her stink face, she loved it.
