Roasted Chickpea Gyro

Yesterday’s post (Vegan Tzatziki) was all in preparation for this baby. This gyro is ridiculously good. Now if you are a ride and die lamb gyro fan your not going to be “fooled” into thinking this is the same thing. It’s a dish that holds it’s own and doesn’t need to be compared to anything else.

Ingredients

  • 2 cans chickpeas; rinsed
  • 1 tbsp turmeric
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tbsp salt
  • Vegan Tzatziki
  • Pita Bread
  • Tomato; sliced
  • lettuce

Preheat the oven to 400 degrees. Take the rinsed chickpeas and put them in a bowl. Add the turmeric, paprika, garlic powder, and salt. Toss until they are fully coated.

Spray a baking sheet with baking spray and put the chickpeas on in one layer. Bake for 12-15 minutes; careful to not dry them out.

Slice the tomatoes and shred the lettuce.

IMG_2937Put the tzatziki, tomatoes, and lettuce on the pita bread.

Add the chickpeas and enjoy.
