Vegan Baked Burritos

My husband walked into the house just as I was taking these puppies out of the oven the first time I made them and he has been requesting them ever since. These are seriously good! You would have to be crazy to miss the cheese or meat, so it’s a good beginner vegan meal! My kids of course agreed!


  • 3 avocados
  • Cilantro
  • 1 tbsp minced garlic
  • 1/2 sweet onion; minced
  • 4 sweet peppers; sliced
  • 10 mushrooms; sliced
  • 1 (32 oz) can of vegetarian refried beans
  • 1 (32 oz) can of tomato sauce
  • 1.5 cups of cooked brown rice
  • 1/4 cup nutritional yeast
  • cumin, salt and pepper to taste
  • 1.5 tbsp cane sugar
  • Chipotle Tabasco
  • large tortillas
  • 1 lime

In a large pot add the minced garlic, onions and peppers. Season with cumin and salt/pepper. After 5 minutes add the mushrooms and the cilantro.


After another 5 minutes add in the refried beans, nutritional yeast, and 1/2 a cup of the tomato sauce.


In a bowl combine the rest of the tomato sauce, 1.5 tsp of cumin, salt and pepper to taste, sugar, and another handful of cilantro. Then add some of the chipotle tabasco. Preheat oven to 375.


Put burritos together by adding rice, the bean mixture, a few slices of avocados from one of the avocados, and some cilantro. Roll them and place in a greased 9×13 inch ban.

Pour the tomato sauce mixture of the burritos and bake for 25 minutes.


While they bake make the avocado sauce by blending a handful of cilantro, 1.5 tsps of cumin, garlic powder, and salt, the juice of 1 lime, two avocados, and half a cup of water.

When the burritos are done top with the avocado sauce! We also like to put cabbage and fresh tomato on ours.
