Vegan Bean Gorditas

This is my 50th post to the website! When I started it was more of a way to keep my favorite plant based recipes we were tying in one place and it has quickly become my favorite hobby and an amazing way of life. I will confess, the number one meat splurge for us is always mexican food. There is this little truck called Joannas a couple of miles away from our house that we are addicted too. Her tortas, tacos and gorditas are UNREAL. If I could get aways with it I would eat her food every day. I am always on the search for ways to make our favorite meals vegan friendly and this recipe hits the spot. If you have never had a true gordita make this! You will soon be a fan.

Ingredients for Corn Cakes

  • 2.5 cups masa/cornmeal
  • 2.5 cups water
  • 1/4 cup olive oil
  • 1 tsp baking powder
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup oil for frying

Ingredients for filling

  • 1 can black beans
  • 1 can white beans
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp chopped cilantro
  • shredded lettuce
  • avocados; sliced
  • pico de gallo

These cakes gave me a bit of an issue at first but once you get it they are so worth it. First add the water, oil, and spices to a bowl and mix well.

Slowly add in the cornmeal a little at a time until thoroughly combined.  Set it aside to rest for 2 minutes. Begin heating your oil at this time.

Take a handful and make a ball, flatten into a disk. I made mine a little t0o thick so you will want yours bit thinner than you see in the pictures (They still worked just fine but will be easier if they are about half an inch thick).  Place disk into hot oil and fry for about 3 minutes and then flip and continue cooking. You want each side to be golden brown and cooked through. Do this with the rest of the dough.

When they are done frying place them on a plate lined with a paper plate to soak up the excess oil. Then combine the beans with the spices and cilantro.

Cut the corn cakes from one end to the other leaving one side attached. Then stuff with the beans, avocado, cabbage and pico.
