Did you know quinoa makes a delicious breakfast? I love making this for a protein packed meal to start our day off right!
Quinoa is a quick-cooking, gluten-free whole grain (actually a pseudo whole-grain, because it’s cooked like a whole grain but is the seed of a beet relative). Quinoa grows in a rainbow of colors, but the most commonly available are red quinoa, black quinoa and white quinoa. Taste and nutrition are similar among the colors. White quinoa tends to cook up fluffier, while red quinoa and black quinoa have a crunchier texture and the grains don’t stick together as much.
- 1 cup quinoa
- 3 cups water
- 4 large apples (peeled, cored, and cut into cubes)
- 4 tsps cinnamon
- 2.5 tbsps pure maple syrup
Prepare the apples.
Add the quinoa, apple pieces, and water to a medium sized pot. Bring to a boil, cover and reduce to a simmer for 20-25 minutes. The apples will be soft and the quinoa will absorb the water.
Stir in the maple syrup and the cinnamon. Serve and enjoy.
