Recently,for some reason, lunch is always the meal I eat the worst during. That “some” reason is the fact that we have been snowed in for a little over a month now and this mama has a big case of cabin fever. By the time nap/quiet time comes around (aka mom’s lunch time) all I want to do is sit on the couch, watch a show and eat something delicious and quick to grab. Unfortunately for me my choices aren’t always stellar, so I tried meal prepping a bit one sunday and made this smashed chickpea salad to eat in wraps or sandwiches for lunch throughout the week. One of my best lunch decisions yet. This is full of nutrition and so good it almost feels wrong!
- 1 can chickpeas
- half a red onion; chopped
- 1 stalk celery; sliced
- 1 large (or 2 medium) carrots; peeled and diced
- 1 apple; peeled and diced
- 1/2 cup chopped kale
- 1/2 cup chopped cilantro
- 1 tbsp Vegan Mayo (we use Just Mayo)
- 1 Tbsp Dijon mustard (or any mustard you wish to use)
- salt and pepper to taste
- Cucumber slices to top with (optional)
Drain and rinse the chickpeas and then use a fork to quickly mash them, leaving them with lumps. My toddler loved this job (and I was able to get everything else prepped while she worked on it).
Add in all of the vegetables/fruit and mix until well combined.
Add in the mayo, mustard, salt and pepper. Combine completely again.
I like to eat this plain, or on bread/in a wrap with cucumber slices.
I basically want to eat it every day.
