Vegan Chickpea Falafel

I had never heard of falafel before but since we are tying hard to eat a more plant based diet I have been branching out. When I say this recipe I knew I had to make my own.

Ingredients

  • 2.5 cups chickpeas
  • 1 white onion; chopped
  • 1/2 cup oat flour*
  • 1/4 cup scallions; chopped
  • 1 tbsp olive oil
  • 1 tsp cumin
  • roasted red pepper hummus
  • fresh spinach leaves
  • pita bread

 

Put oil, chickpeas, white onion, oat flour, scallions, olive oil,  and cumin into a food processor. Blend until combined and a wet dough forms.

Place the dough into the fridge to allow to cool for an hour.

Once chilled cover the bottom of a frying pan with oil and heat on medium. Roll the dough into small patties and place into the oil. Cook one side for 2-3 minutes and then flip over, cooking for another 2-3 minutes. Remove and place on a plate lined with a paper towel to soak up the remaining oil.

 

We served ours on pita bread with roasted red bell pepper hummus and fresh spinach leaves.
