Vegan Black Bean and Corn Tacos

Mexican cuisine is probably our favorite kind of food; I decided to dedicate this week to to two amazing vegan and one vegetarian mexican dishes. These tacos take 15 minutes tops to put together and are ridiculously good. They are incredibly filling so you won’t miss the meat.

Ingredients

  • 1 can (16 oz) Black Beans
  • 1.5 cups corn
  • 1 tbsp minced garlic
  • 1 can (4 oz) green chiles
  • 1/2 green onions; chopped
  • 1/2 cilantro; chopped
  • 1 tsp cumin
  • 1/4 cup classic hummus
  • Juice from half a lime
  • 1 tsp olive oil
  • 1 avocado, sliced
  • flour tortillas
  • salt and pepper to taste

Heat oil in a pan. Saute the green onions and minced garlic for 2-3 minutes.

Add the cumin, black beans, corn and green chiles. Cook for 2-3 minutes to meld flavors and heat through.

Add the cilantro and mix. Heat the flour tortillas and then spread on the hummus. Taste the bean/corn mixture and season to taste. Add to the taco, topping with avocado and enjoy.
