These cookies get devoured quickly at my house. They are very easy to make and have a great texture. I have tested them on people of all ages and none of them have been able to tell the difference between these and “normal” cookies. I will say they lack that buttery flavour my favorite non vegan chocolate chip cookies have but I love these just as much.
- 1/2 Cup packed brown sugar
- 2/3 cup white sugar
- 2/3 cup melted refined coconut oil
- 1/2 cup unsweetened vanilla almond milk
- 2 teaspoons vanilla
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup vegan semi sweet chocolate chips
- 3/4 cup vegan white chocolate chips
Pre-heat the oven to 350 degree fahrenheit. Mix the sugars and coconut oil completely. Add in the almond milk and vanilla. I then use the paddle attachment to my kitchenaid to add in the flour, baking powder, baking soda and salt until the dough forms. Add in the chocolate chips.
I use a cookie scoop to place them on the baking sheet and then flatten them down just a bit. Make sure they are 2 inches apart.
Bake for 12-13 minutes until the edges are lightly browned. Cool for 1 minute and then move to cooling rack. Enjoy!
